Sautéed Pork With Veggies

I wanted to share the dish that is a bit similar to "pinakbet" (a popular Filipino vegetable stew)
I really love this dish, but my daughter @tegoshei can't eat some of the ingredients in it, like one of the main ingredients, which is bagoong and oyster sauce. So I never dare to cook pinakbet at home. When I sometimes crave it, my husband will just buy it outside.

But I came to realize that I could cook a dish that has a closer taste to pinakbet. This is my version of sautéed pork with veggies.

Sautéed Pork with Veggies



INGREDIENTS:



  • Pork
  • Squash
  • String Beans
  • Eggplant
  • Okra
  • Onion
  • Garlic
  • Knorr Cube
  • Knorr Liquid Seasoning
  • Ground Black Pepper
  • Salt
  • Canola Oil
  • Water

PREPARATION:

Wash the pork thoroughly and then cut it into cubes.


Wash and peel the squash, then cut into cubes.
Wash and slice okra.
Wash the string beans and cut them.
Wash the eggplant and cut it into the shape you like.
Peel and wash the onion, then cut it into small pieces.
Crush and peel garlic, then mince.
Set them all aside.

Heat the pan or cooker, then sauté pork until golden brown and the oil renders. Then remove the pork and transfer it to a plate.

Sautee or fry the eggplant with the oil from the pork. Remove from the pan and transfer to a plate, and set aside.

Heat the pan again, and add a small amount of canola oil. Sauté onions and garlic until fragrant. Then put the sautéed pork back and sauté together with the aromatics.

Then add water and let it simmer. When it starts to simmer, season it with Knorr liquid seasoning, ground black pepper and a pinch of salt to taste. Stir for a while to combine and then cover the pan and continue cooking until the meat becomes tender and the water is reduced too.



Then add the squash, stir to mix.

After a little while of stirring, add the okra and string beans. Stir to combine and then add the Knorr cube. Add a small amount of water and continue cooking until the veggies are cooked. But make sure not to overly cook them.



Then add the sautéed or fried eggplants. Mix all the components carefully. Cover the pan again for just a minute.

And it's done...😊
I am really happy with the outcome. The taste is so close to pinakbet minus the bagoong. But the saltiness, the texture of the veggies and the savory taste of the pork really seem like you're eating pinakbet.

So for those who are allergic to seafood and love to eat pinakbet, try this out and I'm sure you will surely like it.
