I prepared and cooked this simple and delicious dish for our meal today.
Actually, this is some kind of experimental dish, meaning I did not watch any videos from various chefs on social media and followed or sometimes just got some ideas from their recipes.
I also enjoy creating my own recipes sometimes, just like I did today.
So, here's how I did it.

Wash the pork thoroughly. Let it drain and set aside.
Wash and peel chayote, then cut into strips.
Peel and wash the onion, then cut it into the desired shape and size.
Peel the Garlic, then slice it thinly.
Wash the bell pepper, remove the seeds, and then cut into strips.
Set all the prepared ingredients aside.
I parboil the pork first to remove some impurities and to tenderize the meat. Aside from that, I also want to make a meat or pork stock out of it.
So here it is...
Boil some water in a pot or cooker, season with soy sauce, Knorr liquid seasoning, bay leaf, onions, and pepper, whole or pamintang buo, and squeeze a little lemon juice.
Boil the pork for a few minutes, then skim and remove any impurities. Just half-cook the meat. Transfer the meat and let it cool slightly. Then slice the beef into strips. And set aside.
Transfer the soup or stock into a bowl, and be sure to strain out the spices, seasonings, and any remaining impurities. It is always good to have or make our own meat stock.
So now let's proceed and continue cooking.

Heat a pan on the stove and then melt one tablespoon of butter. Sauté the chayote for about 2 to 3 minutes. Then transfer them to a plate. With the remaining butter in the pan, slightly sauté the bell pepper, and then remove it and transfer it to a plate.
Add a small amount of canola oil to the pan. Once heated, sauté onions and garlic until fragrant. Then add and sauté the pork with the aromatics for a few minutes, and then add some tomato paste. Stir and mix them well.
Then add a pinch of salt and just a pinch of Magic Sarap seasoning to taste. And then add the pork stock. You can also add one teaspoon of sugar to balance the flavor. Cover the pan and let it boil for a few minutes.

Then, add a small amount of slurry to achieve a slightly sticky sauce. Continue cooking until the pork is tender and soft. Then add the chayote. Mix and combine, then continue cooking until the chayote becomes soft but still slightly crispy.

Then, finally, add the bell pepper. Continue cooking for a few seconds, and it's done.
