My Version of Beef Mechado

Let's have some "beef mechado" this time. Beef Mechado is a classic Filipino beef stew characterized by its rich, tangy and savory tomato-based sauce, often complemented by potatoes and carrots.

I cooked this dish yesterday for both lunch and dinner.
So, let's take a look at how I did my version of this dish.

My Version of Beef Mechado



INGREDIENTS:



  • Beef Chunks
  • Potatoes
  • Carrots
  • White Onion
  • Garlic
  • Bell Pepper
  • Tomato Sauce
  • Beef Cube or Pork Cube
  • Magic Sarap Seasoning
  • Soy Sauce
  • Knorr Liquid Seasoning
  • Garlic Powder
  • Ground White Pepper
  • Bay Leaf
  • Pineapple Juice
  • Sprite
  • Lemon
  • Canola Oil
  • Water


PREPARATION:



Wash the beef chunks thoroughly. Then marinate the beef with soy sauce, lemon juice, garlic powder and ground white pepper. I added pineapple juice and Sprite to help tenderize the meat. Set for 2 hours or overnight.

Wash and peel potatoes, and cut them into your desired shape and size.
Wash and peel carrots, then cut.
Peel and wash the onion, then cut it into any shape you like.
Peel and crush the garlic.
Wash the bell pepper and cut it into cubes.
Then set all the prepared ingredients aside.

COOKING TIME:

Heat canola oil in a pan and then sauté onions and garlic until aromatic. Then add the marinated beef.

Sauté for a few minutes with the aromatics. Then add the bay leaf and the marinade sauce. Cover the pan and cook for a few minutes.

After a few minutes, stir occasionally until the sauce evaporates. Then add tomato sauce, stir and mix to combine. And then add water, cover the pan and continue to cook.

Then add beef or pork cube, just a pinch of salt and a pinch of Magic Sarap to taste. Cover again and continue to cook until the meat is soft and tender.

When the beef is already soft and tender, add the potatoes and carrots. I added a little amount of sugar to balance the flavor, but it's only optional.

Then, lastly, add the bell pepper. Continue to cook for a few seconds, and there it is, all done and ready to serve while hot.

My husband and my daughter really like to eat beef, but I rarely cook beef dishes because, aside from being expensive, I really don't like to eat beef. I only eat the veggies mixed in it. But I'm happy that every time I cook beef for them, they both love the taste and the way I cook it. Their happiness is all that matters to me. 🥰
