I discovered this way of cooking ampalaya on YouTube and was interested in giving it a try, although I didn't follow everything I saw to create my own version. I cooked it yesterday for our lunch, and it's truly delicious, and my family loves it too. It has a less bitter taste, it's crunchy and yummy, so even a kid can eat it, and the sauce was really savory, the fresh tomato juice enhances the flavor in it.
Here's how I did it.
Wash the pork thoroughly and then cut into small pieces.
Wash the ampalaya, then cut it in half and remove the seeds. Then cut the pieces again into smaller pieces of your desired shape and size. Add some salt to the ampalaya and mix it well. Let them sit for about 20 minutes. Then, after 20 minutes, rinse them well with running water. And then blanch the amplaya in simmering water for 3 to 4 minutes. After blanching, transfer the ampalaya to a bowl or plate.
Wash the tomatoes, then cut a slight cross in each one, and blanch them in hot water for 3 minutes. After blanching, transfer them into a bowl with cold water and let them soak for about 3 minutes. Then peel off the skin and cut them into small pieces. (as we cook this later, this serves as a fresh tomato sauce in this dish)
Peel and wash onions. Cut some of it into strips and some into a rounded shape.
Crush and peel the garlic, and then cut it into smaller pieces.
Then set all the ingredients aside.
Heat some canola oil in a pan or cooker and then sautรฉ onions and garlic until aromatic.
Then, add the pork and sautรฉ it until slightly brown.
Add the tomatoes, mix them well until they are crushed. Season with soy sauce, Knorr liquid seasoning, a little brown sugar, only half of the pork cube and ground black pepper.
Continue stirring and mix them well. Then add just enough water to cover the meat. Cover the pan and let it simmer until the sauce has reduced.
Then, add the rounded cut onions and the ampalaya. Mix them slowly to combine, then cover the pan and continue to cook for 2 to 3 minutes more.
And it's done. Ready to serve while it's hot. This is perfect for lunch or dinner. So come and have some...๐
