Ginataang Bangus with Veggies

I hope everyone's doing great and in good health.

I'm going to share with you our viand for today. I cooked some fish this time. Every time I cook fish, I make sure to prepare or cook another dish for my daughter too, because she can't eat fish and other seafood.

My menu for the day was "Ginataang Bangus with Veggies" (Milkfish with Veggies in Coconut Milk), and I also cooked some pork chops specially for my daughter. I would love to share the recipe for that here, too, soon.

For now, let's have the Ginataang Bangus with Veggies.


Ginataang Bangus with Veggies



INGREDIENTS:



  • Bangus or Milkfish
  • Coconut Milk (I used CocoMama this time)
  • String Beans
  • Eggplant
  • Okra
  • Onion
  • Garlic
  • Ginger
  • Green Chili
  • Fermented Black Beans
  • Vinegar
  • Salt
  • MSG (just a little amount)
  • Magic Sarap Seasoning
  • Canola Oil
  • Cornstarch


PREPARATION:

Wash the fish. (It's already cut and there's no more fins in it, also. My husband prepared it already.) Rub some salt on the fish and then coat them with cornstarch and set aside.


Wash and cut the string beans.
Wash and cut the eggplant.
Wash the okra and cut off the head. .

Peel and wash onions, and then cut.
Crush and peel the garlic, then cut.
Wash and peel ginger, then cut into strips.
Wash the green chili and set them all aside.


COOKING TIME:

Heat some oil in a pan or cooker and fry the fish until they are all finished, then set aside.


Heat some canola oil in a pan again, then sauté onions, garlic, and ginger until aromatic.

Then, add the string beans and okra. Sauté them together for a few seconds and then add the eggplant. Sautee and mix them well for another few seconds only.

Add the fried bangus, add some vinegar, and the coconut cream or gata. Bring it to a simmer on medium heat. When it starts to simmer, season it with a pinch of salt, a little MSG, and Magic Sarap seasoning.

Then cover the pan and continue cooking until the coconut cream has reduced. Then add the chili. Continue cooking for a few minutes, and then finally add some fermented black beans. (Only just a little, and this is optional too.)

And there it is!! All done and is ready to serve. It's so creamy and yummy!! Another satisfying dish for the family again. I'm sure you have some delicious dishes too, so cheers!!
