Let's have a yummy and friendly budget dish for today. It's "eggplant burger with creamy mushroom sauce. I just saw this recipe on social media and got interested in trying it. Then I made it for our lunch yesterday, adding some extra ingredients.
And here's how to make it. Let's take a look. 🙂
Wash the eggplants, then cut them in half.
Peel and wash the onion, and then cut it into small pieces.
Crush and peel garlic, then cut into small pieces.
Wash the spring onions and cut them thinly.
Slice the mushroom and set aside.
While preparing some of the ingredients, I cooked the eggplant in boiling water. When the eggplants were already cooked, I removed them from the cooker, transferred them to a plate, and let them cool down. Once cooled down, cut the eggplants into strips, then cut them again into small pieces.

After cutting the eggplants, put them in a bigger bowl. Then add the onions, garlic, spring onions, and eggs, and mix them. Then add just 1 tsp of salt, ground black pepper, a mixture of paprika, and a little garlic powder to taste. Then add all-purpose flour and crispy fry. Then mix them all and set aside.
Heat some canola oil in a pan. Then fry the burger-shaped eggplant mix gradually until all are finished. Once cooked, put them in a plate with a kitchen towel. And then set aside.
In another pan, heat it and then melt some butter in it. Once melted, add the flour and stir until it dissolves. Then add pork cubes, continue stirring, and wait until the pork cubes dissolve.
Then add the mushrooms, and then the evaporated milk. I added a little amount of soya milk. Cook the sauce until it thickens. I added garlic powder and 1 1/2 tbsp of Mang Tomas Siga sauce to make it a bit spicy. Stir the mixture and continue cooking for a few seconds, and then turn off the heat.

And they're done...so now let's do the plating.
Arrange some pieces of eggplant burger on a serving dish and top them with the creamy mushroom sauce and sprinkle some thinly sliced spring onions. You can also use parsley or basil. And there it is, ready to serve. 🍽
I was so glad that my family loves it. Anyway, it was so delicious, especially when paired with a banana as dessert. Again, a satisfying meal with my family.
