Prepare the Pork:

In a pot, combine pork and water. Bring to a boil, then reduce heat.
Skim off any scum or impurities that float to the surface.

Add onion, garlic, and peppercorns. Simmer for 45 minutes to 1 hour or until the pork is tender.
