Paupiettes aux pistaches
Salut à tous, des paupiettes farcies aux pistaches et une poêlée de girolles.
Il faut des escalopes de veau, de la farce, des pistaches, des girolles et une garniture aromatique de légumes : carottes, oignons, céleri.
Ajouter les pistaches à la farce et rouler les paupiettes.
Les mettre à dorer à feu vif, ensuite ajouter la garniture de légumes coupées en dés et déglacer avec du vin blanc et un peu d'eau.
Laisser mijoter trente bonnes minutes et pendant ce temps faire revenir les girolles à feu vif et ensuite ajouter du jus de cuisson des paupiettes et laisser confire à feu doux, il ne doit plus rester de liquide.
