On Sundays, my wife and I usually have lunch at my mother's or mother-in-law's house. As this has become a tradition, we no longer consider ourselves visitors and always bring a dish or ingredient to help prepare lunch.

This weekend, however, we decided to stay home and prepare something different: shrimp parmigiana.

Of course, we did everything together. We started by cleaning the shrimp, removing the shells and leaving only the fillets. Then we seasoned them with salt and dipped them in egg white so that the breadcrumbs would stick well, forming a crispy crust. Then we fried the breaded shrimp in hot oil until they were golden brown.

Meanwhile, my wife prepared a delicious tomato sauce made with fresh tomatoes, onions, cilantro, and tomato paste. We placed the shrimp on top of the sauce in a baking dish and covered everything with a generous layer of mozzarella cheese. We baked it in a preheated oven at 400°F for about 15 minutes, until the cheese melted and browned slightly.

The result? An irresistible shrimp parmigiana! Actually, we had planned to make this dish on Valentine's Day, but it didn't work out at the time. So, we took advantage of Sunday to finally prepare it — and it was simply delicious!
