Homemade milk pudding || พุดดิ้งนมสด 🍮😊

My children’s school participates in Thailand’s School Milk Program, a government initiative that promotes students' health and growth by distributing milk to primary school students every school day. The school provides UHT milk boxes or pasteurized milk (1 box per student).
This project has been running for over 20 years and aims to: Improve nutrition (calcium & essential vitamins) , Reduce malnutrition in children, Encourage milk consumption habits, Support local dairy farmers.




During school breaks, the school still gives UHT milk to students. Today, I used my kids' school milk to make homemade milk pudding, a simple, delicious treat!
Ingredients




- 400 g. plain UHT milk (or fresh milk)
- 1 tsp agar powder (or gelatin)
- 75 g. honey (adjust to taste)
- 10 g. matcha powder or cocoa powder (for sprinkling on pudding before serving)
Instructions

- Pour fresh milk into a pot.



- Add agar powder and stir well. Let it sit for 10 minutes.

- After 10 minutes, place the pot on the stove over medium heat.

- Making pudding: The gelatin powder should be soaked in milk for about 5-10 minutes to allow it to fully hydrate, which helps it dissolve more easily and prevents clumping. Once soaked, heat it over medium heat while stirring continuously to avoid burning at the bottom of the pot. Stir until it boils, this step won’t take long because pre-soaking the gelatin powder makes it cook faster.


- Stir continuously with a spatula or spoon until the milk boils.


- Keep stirring for another 2 minutes after boiling. Check if the agar powder is fully dissolved by looking at the back of the spoon. If no powder sticks, it’s fully dissolved.


- Turn off the heat, then add honey.

- Stir until the honey is fully dissolved. Let the mixture sit until slightly warm, stirring occasionally.



- Strain the mixture once through a fine-mesh sieve and pour it into a mold (I use a milk carton as a mold).




- Remove any air bubbles and refrigerate for 1-2 hours until set.

- Once set, gently remove the pudding from the mold, place it on a plate,





- A light sprinkle of matcha powder or cocoa powder adds the perfect finishing touch.



- (Optional) Friends can also cut the pudding into slices for a more appealing presentation. Serve chilled! Enjoy with fruits or syrup. 🍮❤️😊
