Let's have some ensaladang okra today. I called it very simple because I only had a few limited ingredients available at home. This makes a great side dish for grilled fish or pork. I've been cooking meaty dishes lately, and I've suddenly had a craving for this kind of salad.
This is how I made it.
Wash the okra properly.
Peel and wash the onion, and then cut it into your desired shape and size.
Wash and peel the ginger, then cut it into small pieces.
Wash and cut spring onions.
Wash the tomatoes and cut them into small pieces.
Set them all aside.
Now let's cook the okra in a steamer. You can also boil the okra.
Boil some water in a pot or cooker with a steamer and steam the okra until they're slightly softened.

After steaming the okra, transfer them into a bowl with cold water and then strain, or you can also refrigerate them for about 5 to 10 minutes. This can reduce the sliminess and retain its fresh color.

After at least 5 minutes in the fridge, take out the okra and then cut off the head. Slice them to remove the seeds. Then set aside.
Mix vinegar, salt, ground black pepper, and a few drops of honey. Then set aside.
In a serving plate or bowl, put all the sliced ingredients together and add the vinegar mixture. Toss and mix them thoroughly.
And there it is!
This is also good with some lemon or kalamansi juice and some chili. Others would love to add some salted eggs or a little bagoong to it. It's really appetizing. This is my husband's favorite vegetable salad, too.

We have okra here too, but I have never used it to make a salad. You made it look delicious. I hope next time if there is okra for sale at the market, I'll try making it this way. Thanks for sharing π
