A Simple Chicken Curry Gravy Recipe

There is a limited number of Nigerian sauces or gravy recipes so once in a while I try to switch it up and chicken curry (of Indian origin I presume) comes to the rescue. It's really spicy and different from the regular. I'm not particularly fond of this type of spicy but my partner likes it. We eat it with white rice, potatoes or even alone.

Here are the ingredients I used;

Chicken breasts
Scotch bonnet pepper
Green pepper
Onion
Carrot
Curry
Thyme
Garlic
Ginger
Turmeric
Coriander
Salt
Corn flour
Vegetable oil

Cooking Recipe
First, I made a marinade for my chicken breasts. You can use any part of the chicken but I prefer chicken breasts. For 1kg of chicken I used 1tsp curry, 1tsp thyme, 1tbs garlic powder and salt to taste. I let it marinade for over an hour.

In a pot, I heated up vegetable oil and added the sliced onion and pepper. Also curry, thyme, turmeric, chicken seasoning and salt, fried for about 2 minutes.

I then threw in the chicken to fry till a bit brown and decant the oil.

I added a cup of water to the chicken and let simmer a bit. Then I added a tsp of garlic and ginger.

In a bowl, I mixed 2 tbs of corn flour in water and set aside.

Next, I added the carrots and green pepper and then the corn flour mix to thicken the gravy.

Lastly, I added little seasoning to taste and then 1 tsp coriander powder.

Here's the finished look, served with rice.

It tastes really good, like a meal from an Asian restaurant and I couldn't be prouder with the outcome. I only wish I was a bit more open-minded with food.
