My Delicious Jollof Pasta

Hello Foodies, in my last article yesterday, I mentioned that I made pasta for Dinner. I made This Delicious, mouth-smacking pasta for me and my friends.
After a very long and boring day, I stepped out to the nearest grocery store just to get some items and prepare some meals. I didn't really know what I was gonna eat , not until I got to the store then I decided to go with pasta , since it will be a bit light and suitable for the night.

It's been quite long. I took processed food last, I have been very intentional about eating natural food.i have avoided anything artificial but spaghetti was what I could lay my hands on last night, so I decided to make it very Rich and full of Vegetables.

My Ingredients

  • Spaghetti
  • Groundnut oil
  • Vegetables (Onions, carrots, Fresh - tomatoes, green beans)
  • Pepper
  • Crayfish
  • Salt
  • Seasoning cubes
  • Tomatoes

Procedures

  • I'll start by parboiling my spaghetti, but I'll do that when my pot is placed on fire and the water is boiled. Then I'll add a bit of vegetable oil and salt in the boiling water.
    The vegetable oil is to make sure that the pasta doesn't stick together, while the salt will get absorbed into the body of the pasta, giving it some taste.

  • After about 5 mins of boiling the spaghetti, I'll bring it down from the fire, then I'll drive and rinse. I don't like making my spaghetti too soft while parboiling so that eventually while cooking it properly, it doesn't get soggy.
    Then I'll rinse my spaghetti with cold, clean water.

  • While I was parboiling my spaghetti, I had to wash my vegetables thoroughly and then chop it to desired sizes and shape.

Now that we are all ready and set, leers COOK

Procedures:

Step one:

In a hot pot, pour in your vegetable oil, just the little amount required for the food.

Step two:

As the oil gets hot go in with your onions and then your tomato paste and stir for about 2 minutes. The reason for stirring and frying is so that the tangy taste of the tomatoes will vanish.

Step Three:

while still frying, I'll add my spices, like curry, thyme and bay leaves. Frying it makes the flavour more pronounced.

Step four:

add your broth or stock. For me, I didn't use any, so I went in with water. After adding your water, I added my crayfish, pepper and adjusted all my seasonings to the desired taste.

Step Five:

Go in with your spaghetti, stir, adjust the taste again and then cover to cook.

Step Six:

while allowing my spaghetti to cook, I will make a little stir fry sauce with my Vegetables

I'll preheat the pan
Add very little amount of oil
Then go in with my chopped vegetables
I added a little soy sauce to it
Stir fry for a few minutes and take it off the fire. I didn't really have to fry for so long just so that my veggies will still be crunchy.

Step Seven:

when my spaghetti is done and the water has totally dried up, I'll pour in my vegetable stir fry.

Now my pasta is ready, it looks yummy already.
