My First Time Cooking Carbonara With A Twist

Since tomorrow is Three Kings let me share you a recipe that I cooked for the very first time. My mom is a very busy person, my father left us when I was little. So, my mom left no choice but to work and to be a full time mom. She rarely cooks; at early morning she leaves the house at 6:30, while I need to go to school before 7. In weekends expect the household chores. It was her birthday when she cooks a Carbonara. It was also my first time to try it. As a kid you'll probably love a red spaghetti instead of white. But after tasting it with a garlic bread, I already fell in love with it and remember its very unique taste.

As the years went by; I've tasted a lot of Carbonara, some of them are dry, similar to pancit palabok if you're familiar. Nothings beat the recipe of my mom made. These last Christmas, my grade 4 son won a raffle in their Christmas party. A set of a Carbonara, I just need to buy the missing ingredients and I'm ready to cook it for the first time. I've change from a nervous cat into a wild dog.. I mean nothing will happen if we won't give it a try besides there are ingredients and procedure in each recipe. Mom has a lot recipe books in the house, I'm just sad that we never get to bond in cooking. Aside from the set of Carbonara the ham came from the church of my son. So, we only bought the rest of the ingredients.

Ingredients

  • A set of Carbonara
  • Pasta 700 grams
  • 1 pack of creamy carbonara sauce 700 grams
  • 5 tablespoons of butter
  • 1 large onions
  • 1 cloves of garlic, chopped
  • I put half of the Ham in the picture
  • 100 grams of mushrooms
  • 1 1/2 cup pasta water
  • Grated cheese
  • Salt, pepper & seasoning to taste
  • 250 ml of all purpose cream (optional)

Procedure

In a casserole boiled the pasta untill Alden TE, set aside the pasta water needed. Add a little cooking oil so it won't stick together. In a pan add the butter, saute the onions, garlic and ham mixed it well.

On a medium heat add the pasta sauce and mixed it well.

Add the all purpose cream

Add lastly add the cheese.

We don't have a grater, so @katsuki29 use a fork but because it's not a quick melt cheese. She needed to use a pasta water to dissolve the cheese. I also add pepper, salt and seasoning to taste.

I've tasted a little and almost cried with the results. It's so delicious 🤤😋. It was the same as mom's. I know when she taste this she'll be proud of me. My kids and husband even loves the taste.
