Being in a Tropical country is advantageous for fruit lovers like me and when there are more than enough then you need to do something to make it last longer instead of wasting such a great opportunity after long months of waiting. Yes, and how I love to cook sweetened fruits especially when my kids were younger until now! I love jellies and jam without adding preservatives.
Last summer was the peak of fruit bearing trees in our place especially mangoes, dragon fruits, pineapples, jackfruits and a lot more! As for mangoes, the neighborhood in the farm seems to have grown Indian mangoes in their own backyards that you don't need to buy them. They'll be more than happy to let you pluck with gusto instead of letting it rot on the ground due to over riping! My helper brought the ripe ones from the farm as you can see on the above photo.
Mango Jam preserve
Take note: The ratio in making a preserve is "one-is-to-one". Meaning the measurement should be equal to each other and don't add water because the juices of the fruit will naturally ooze out and blend with the glucose itself. Gradually stir until it becomes syrupy. This will serve as jam. Make it thicker if you want to make a candy out of it.
I decided to make a yummy jam and delicious Ice Cream from the ripe Indian mangoes.
First remove the seeds and cut it into thin strips or cubes.
Use a measuring cup and see how many cups you've made before putting it in your wok. I used brown sugar for the jam and centrifugal sugar for my ice cream.
Stir over low heat once the mixture becomes syrupy.
This one is my yummy jam. I love to use it as spread for my sandwich over a cup of hot brewed coffee!
And this is for my delicious Ice Cream!
Ingredients:
• 6 cups Sweetened mango
• 1 can Condensed Milk
• 2 cans Nestle Cream
• 1 sm. box of cheese cubes
• 1tsp. Vanilla
- In a blender, mix all ingredients until the desired thickness is achieved. In my case, the mango went last since I wanted to see some mango particles in it.
I placed it in my spare ice cream canister and had it freezed overnight.
And that's my delicious Mango Ice Cream Overload! I even brought some to our place in the neighboring city and made another set for us to enjoy another feisty snacks.:)
