Sopas - A Filipino comfort food known as macaroni soup; so creamy, so yummy!

What’s cooking foodies, hivers? I hope your tummies are all full and happy. 😋
Today, I am sharing with you a recipe for a simple yet balanced dish that will surely make you want to sit down and enjoy a delectable meal. Let’s call this sopas or soup in English. I’d say this is more than just soup – it’s a colorful, hearty bowl full of wholesome goodness.

This is best eaten on a rainy day when it’s cold and windy, and all you want to do is enjoy a warm meal in the cozy comfort of your home.

What we need (as shown in the photo below):
Elbow macaroni (we opted for half a kilo)
Evaporated milk (just a can)
Veggies (carrots, cabbage)
Meat (shredded chicken breast, hotdogs)
Butter, onion, garlic

How to cook it?

  1. Prepare a large pot. In it, melt butter over medium heat.
  2. Add sliced garlic and onion. Saute until fragrant and light brown.
  3. Add elbow macaroni (You can either cook the macaroni in a separate pot beforehand or add it uncooked at the beginning)
  4. Add shredded chicken (we cooked this in a separate pot beforehand and then shredded it)
  5. Add hotdogs
  6. Add carrots (Mix, mix, mix!)
  7. Add water (Make sure there is enough water to cook the macaroni). Wait for it to boil.
  8. Pour in evaporated milk (Make sure the macaroni is already cooked). Mix well. Do not boil to avoid curdling.)
  9. Add salt and pepper to your liking (Optional: chicken broth)
  10. Add cabbage. Wait for a minute until it's soaked and soft.
  11. Best to serve it hot.

You can never go wrong with this recipe. It’s so easy to prepare and the taste is really good.
