ASEAN Hive Community Challenge #97 Rice Flour Snacks & Desserts

Blessed Sunday @asean.hive community it's not been a good weekend for me and my husband. But the situation itself fixed it, I was in tears earlier before he need to go to work. He was my everything, my life and my soul. In 20 years being together I learned to handle the worse of the worst. All I asked for now is whatever the trials will have, we can overcome it together. My post for today is my entry to sir @justinparke community challenge. I don't want to miss this because I've tasted a lot of delicious Rice cake since I meet my husband. Our love is like sticky rice, I know we will never be apart.

What is Biko?

Biko is a sweet rice cake from the Philippines. It is made of coconut milk, brown sugar, ginger, and glutinous rice. It is usually topped with latik (either or both the coconut curds or the syrupy caramel-like variant). It is a type of kalamay dish and is prepared similarly, except the rice grains are not ground into a paste. They are also sometimes packaged and sold as suman.

Ingredients

(Not on the photos but included)
Sticky rice - 1 kilo
Brown Sugar - 1 kilo
Jack fruit - 1/4 kilo
Coconut - 3 pieces

Procedure

Wash and boil the sticky rice you don't need to cooked it well. Set aside, now broke the coconuts and shred it in the shredder. My daughter is taking pictures while her grandmother is doing the task. In our country we called that equipment as kudkuran in the market we have machine that shred coconut but because it's a bit far they did it manually.

They already stopped when the end of the coconut is already like on the photo because it will taste bitter.

Here's what they got in the three coconuts, they will now squeeze it's juice because that's what they need to cooked the Biko

Now get your big pans and fire the wood, because it will be more delicious to be cooked on the wood. They now have the coconut milk on the pan wait for it to boil and put the sticky rice, and sugar. Mixed and mixed it until you reach the proper consistency. Or until they are all equal. Hubby said that the chewiness of a Biko will depend on how long you can take to mixed it while cooking. But in their case they've mixed for just 15-20 minutes. They also put the Jackfruit and Latik to blend it well with Biko. They are using a long wooden spatula to mixed it well. Sticky rice is heavy to mixed so on social occasions we asked help to the boys.

We were given this big part and I was happy because my daughter took a lot photos. She knew that I'll be sharing here on hive. It's taste like heaven so delicious soft and chewy so perfect with hot coffee. And I hope you liked my recipe for today.

Haha, there is something very similar here in Cambodia too. Even our stirring sticks are almost identical, usually here they are made from palm wood. I am the jackfruit lover in my family, but the ladies in my family all prefer durian, so I usually the battle at the market to buy either durian or jackfruit.
