Recipe Of Yam And Spinach (Ugu Leaf) Pottage - My Wednesday Highlight

Yam pottage is a popular West African dish consisting of yam chunks cooked in a pepper sauce with traditional spices. It's known as "Asaro" in Nigeria's western region, "Mpotompoto" in Ghana, and "Sese yams" in Cameroon. Yam is one of West Africa's most widely consumed staple foods.

For added nutritional value and flavor, most people garnish their yam pottage with fresh leafy greens like as spinach, bay leaves, and Kale, but some prefer it simple. I prefer the former because of its richness, but either way, with or without, they are equally delicious.

This yam and spinach pottage recipe is based on a classic Nigerian yam pottage recipe. The nutrients in spinach complement the savory flavor of the pottage, which is why some people add Ugu leaf or other vegetables to their pottage.

We'll need a few ingredients to get started with this recipe. Yam and Spinach recipe can be made with only 9 ingredients and steps. Here's how you can go about doing that.

INGREDIENTS

  • Yam

  • Spinach

  • Palm Oil

  • Smoked Fish

  • Red Pepper and Onions

  • Crayfish

  • Salt and Maggi.

Step 1: Cut and slice the yam, then wash and place it in a clean pot, add water and boil for 15 minutes. Then add the blended red pepper and onions


Step 2: In a clean bowl, wash the crayfish to remove the dirt and add it to the pottage.


Step 3: Add the maggi seasoning cubes and the Palm Oil.


Step 4: Now add salt to taste, then wash and rinse the smoke fish to remove dirt and add it to the pottage


Step 5: Slice the spinach (Ugu leaf), wash and add it to the pottage cover the pot and reduce the heat and simmer for 10 minutes.


Now turn off the heat, dish out the yam and spinach, make sure you serve with the chilled drink or juic... enjoy and don’t forget to share with your neighbors 😁
