Breakfast

What did you have for breakfast?

The benefits of eggs are clear. One egg a day as a minimum, although I like having 3-4. I have been hard boiling them, and seasoning, topping it off with some Diana sweet BBQ sauce.

I have also been eating tins of Sardine Filets, as an extra dietary source of Omega 3s. I was eating nearly zero fish for a long time, and after taking a test that showed me how I was in the danger zone for deficiency, decided to find something I could enjoy. I don't live near the ocean, so I had to find a way to close the gap in my diet.

Due to some of the toxins however, I am limiting myself to three cans a week. On odd days I have my Eggs with Chili, Beefaroni, or skip breakfast altogether and go straight to lunch. I was making Crepes for a few weeks there but even though they are quick and easy to prepare, it still seems to take me an hour to prepare four measly crepes, and even longer to finish eating them.

However since I bought pepperoni slices last week, and because I opened the package last night, maybe I will make crepes tomorrow before all the milk gets drank. I bought a fresh bag of flour to use for this, so I should probably practice the method.

What else can I do with Flour, Eggs and Milk? I prefer Crepes over Pancakes. Add lots of sugar and it becomes Cake. Or Cookies. Bread seems complicated, and I don't eat bread these days unless it's a sandwich. I prepared a whole loaf of Ten sandwiches and have them in my freezer, for to-go lunches.

But now as I enjoy my final half-hard boiled egg, and sip the last of my first cup of coffee, I turn my attention to the things I should do today. Blood work, at the clinic. X-ray, at the other clinic. License renewals, and the various things I need to complete for that. Other things too, like setting up the dismantled desk that I should be using for receipts, instead of my bed as I have been using.

It is already Tuesday, the second last Tuesday of July. Half the year is already gone, just like my breakfast is gone. Just like my first cup of coffee, with enough left for one more cup in the pot downstairs. What else will be half-done tomorrow, or by the end of the year? What can I quickly accomplish today, completing so that I can let myself relax? I have a desk in the hallway covered in Receipt tracking portfolios, and my chair also piled with 2025 Receipt tracking portfolios.

On one hand I have under control now my expenses, but where do I put all these binders? I had a shelf ordered from amazon, it arrived weeks ago, but where do I put it? If downstairs, then I have to go up and down the stairs to get them, but if upstairs then I clutter my limited space even more. I know I need to declutter, yet the process always makes even more of a mess. Often the simplest thing to do is nothing, for now. What I really want to figure out is how to re-arrange my desk so I am not cranking my head to the right constantly.

At least I finished eating breakfast... and now I can get my second cup of coffee.
