Secret knowledge.

Most of the knowledge possessed by humanity originates from one author, such as the theory of gravity, or gravitation, which Isaac Newton taught the world, and which we've known since school.

But there is knowledge that has no authorship. History tells us who first came to this or that conclusion in various areas of life. The preparation of many types of mushrooms is such secret knowledge, but how people arrived at it is completely unclear.

For example, there are mushrooms that science considers conditionally edible, meaning that by following certain recipes or recommendations, the risk of poisoning from these mushrooms is either zero or minimal.

These mushrooms typically contain toxins that mycologists compare to rocket fuel. They're called hydrazines. Incidentally, they're even found in the champignons we buy at the supermarket or get baked when we order a flavorful mushroom pizza.

But while champignons are delicious in any form, there are mushrooms such as milk mushrooms, russula, greenfinches, and Tricholoma equestre, which are tough and tasteless when boiled or fried, and when marinated, remain toxic or can become a source of botulism, as they're very difficult to remove sand from.

Their cooking method, in my opinion, is a real mystery that's difficult to unravel.

Also, it should be added that the aforementioned mushrooms have a characteristic, unpleasant bitterness.

Logic dictates that these mushrooms should be subjected to prolonged heat treatment, but no, they are prepared without heat treatment, simply by prolonged soaking in cold water, which is changed several times.

After soaking, these mushrooms lose their toxins and bitterness. They are salted in barrels, infused with salt and alternating with layers of herbs, horseradish, dill, garlic, and whatever else comes to mind.

After three weeks of salting, a true delicacy is obtained.

Who invented this and when is unknown, but it's brilliant!
