Hello foodie lovers! I went to the wet market to buy something for our luncheon. I spotted a pile of boneless anchovies. The trend here is that they have the anchovies deboned before displaying it which is more saleable.
I preferred to make an omelette out of it which is quite simple. All you need are the following:
•500g Anchovies
•4 eggs
•1/2 cup corn starch
•1 clove Garlic
•1 Bulb onions
•1 stick Spring onions including leaves
•1/4 cup Ginger
•1 Bell peppers
•1tsp. Black peppers
•Salt & Seasoning
•Cooking Oil
•After washing the anchovies, drain it. Set aside.
•Slice all the spices in small cubes
•Mix with the anchovies
Mix with corn starch and the scrambled eggs.
Cooking oil should be hot enough so as not to let the anchovies stick on the pan. After placing, adjust the fire over low heat to let it cook gradually without getting burnt but crispy enough.
Next, remove from heat and let the oil drain first.
This will make at least 10-15 cakes depending on the thickness and size of the mixed ingredients you've managed to make. The thinner the better for crispy effect
I even love to munch it without rice when it's hot and crispy! One thing good is that it's very affordable and easy to prepare. The lady of the house see to it that there's a bit of everything for the family to enjoy!
