Banana Stem and Potato croquette

A unique food recipe that is very healthy

Who does not love crispy fries ? We all do but this recipe is special. It has the health benefits loaded with. As I wrote in my last post, my father-in-law prepared banana stem and potato croquette yesterday - it needs some special skills to cut the banana stem and process it but its worth for the health benefit. Especially, when everyone is down and lost appetite to eat, a good snack with mouth watering taste has a lot of role to play. It just brings in lot of positive energy. And if you do not know the health benefit of banana stem, then its the natural cleanser of your stomach - removing all the bad things.

While cutting the stem, a thread comes out of it, so he was taking them out. First it was cut to small round shapes. Then it was further cut into small pieces. And then turmeric and salt was added and left for 15 minutes.

After 15 minutes, squeeze it to take out all the water from it - that's the magic of salt.

Then put that in a bowl with water and stir it with a stick.

The purpose is to take out the extra threads that would have still come out, when cutting it into small pieces. You can't hold them, so this is the way to take them out.

Then boil it for 10 minutes, so that it can be crushed like potato. This is only because we want to use it as a stuff - we do prepare a curry of this, that time, we cook it directly.

Have some potato boiled - we had some left over from lunch.

Now fry it a little and crush them and then again fry it to make the crispy stuff.

Once it cools down make small round shapes and then crush it flat and keep it ready. Now take some gram flour in a bowl, add salt, and a pinch of baking soda and make a batter - must not be moderate so that you can dip the stuffs and fry it.

Now boil oil in a pan, and put those stuffs dipped in batter at high flame.

Fry for 3-4 minutes and they should be ready. I like more crispiness, so for me it was fried a minute more.

And here it is - ready to serve - we put it on a tissue paper to soak some oil.

Some batter was left out, so we cut the idly and fried that as well. Added some pepper powder on top of them.

Yesterday was a difficult day - doing something and serving the family brings us some positive vibes. Unfortunately, my daughter and my father-in-law are down today. Spoke to my friend and he said, it takes 48 hours to become alright but they should be monitored. Good that, I am now alright - I can take care of everyone. Hopefully, we will fight and come out of this together as a family in a day or two max.

I hope with this phase, Covid becomes endemic as said by experts and we can go back to our normal life after two years. Pray god to give me strength and to pass this difficult time.

My prayers for you n your family, please dont worry it just take 1-2 days. Then one start feeling better.
Just a few days ago, we all three, me, my husband and my daughter fell ill the same way. We didn't get tested but probably it was covid as here too everyone is getting ill with these symptoms. In one or two days everyone start feeling better. Hopefully everyone in your family will be ok. May God bless you all! Namaste 🙏

Yes, here also same situation - almost everyone getting it - be they vaccinated or not - time for the pandemic to become endemic. It just makes a bit nervous when it comes to self but praying GOD to help me pass this difficult time.

Yes when my daughters got ill, we both got worried. But during hard times, prayers always help to stay calm and doing your best in any such situation. So keep praying, stay calm and take care!

This looks like such an interesting recipe! I am impressed with your father's flexibility. I wonder how he remains so flexible. My father is sharp mentally and quite surprisingly spry (although he needs open heart surgery). However, he is challenged to put on his socks. That is not an exaggeration. Clipping his own toenails is entirely out of the question because he cannot reach them. Fortunately, I can reach them for him.
