Mi Tortilla de papas / My potato omelet

Hola amigas/os les quiero compartir mi deliciosa tortilla de papas con solo tres huevos Uds. Se preguntarán porque tan pocos huevos? Les cuento un día mis niños querían tortilla y yo solo tenía tres huevos. Así nació y quedó súper rica y liviana, desde ese día nunca más use más de tres huevos, bueno aquí vamos.

Para está exquisita tortilla necesitamos

INGREDIENTES

1 kilo de papas
3 huevos
2 dientes de ajos
1 cucharada de perejil picado
Sal y pimienta a gusto

PREPARACIÓN

Primero pelamos y lavamos bien las papas, luego las cortamos en cubos medianamente iguales.

Las cocinamos en una sartén con aceite que las cubra, cuando están apenas doraditas las sacamos les pones poquito de sal, pimienta y las reservamos (para que se enfríen un poco).

En un recipiente (bowls en Argentina) coloco las claras, y las bato hasta llegar a punto nieve, (punto que tienes que alcanzar: 'de nieve' cuando la mezcla de claras queda firme y se forman picos en las varillas, que no se desprenden y quedan rígidos).

Incorporo las yemas un toque de sal, la pimienta, el ajo y el perejil vuelvo a batir para mezclar todo bien.

Ahora las papas las mezclamos con suavidad para que los huevos no se bajen.

En una sartén preferentemente antiadherente calentamos muy poco aceite del que prefieras vertemos la preparación y cocinamos tapada, ligeramente aceitada, luego de unos minutos la damos vuelta (a fuego lento si la queremos bien seca o a fuego fuerte para dejarla babe o sea húmeda por dentro)

Podemos acompañarla con ensalada fresca.

That's how it was born and it was super rich and light, since that day I never use more than three eggs, well here we go.

For this delicious omelet we need

INGREDIENTS

1 kilo of potatoes
3 eggs
2 cloves of garlic
1 tablespoon chopped parsley
Salt and pepper to taste

PREPARATION

First we peel and wash the potatoes well, then we cut them into medium equal cubes.

We cook them in a frying pan with oil that covers them, when they are just golden brown we take them out, add a little salt, pepper and put them aside (to cool a little).

In a bowl (bowls in Argentina) I put the egg whites, and beat them until they reach stiff peaks, (the point you have to reach: 'stiff peaks' when the egg white mixture is firm and peaks form on the whisk, which do not come off and remain stiff).

Add the egg yolks, a touch of salt, pepper, garlic and parsley and beat again to mix everything well.

Now mix the potatoes gently so that the eggs do not fall.

In a frying pan, preferably non-stick, heat very little oil of your choice, pour the preparation and cook covered, lightly oiled, after a few minutes we turn it over (over low heat if we want it very dry or over high heat to leave it wet inside).

We can serve it with fresh salad.
