Mediterranean Oven Vegetables with the Garden Harvest

( EN / DE ) Our garden has once again given us a wonderful harvest of fresh vegetables and I was in the mood for a kind of Italian antipasti, so I quickly made some oven vegetables out of them, nothing easier than that!
Unser Garten hat uns mal wieder mit herrlicher frischer Gemüse Ernte beschenkt und mir war nach einer art Italienischer Antipasti, also ruck zuck ein Ofengemüse daraus fabriziert, nichts einfacher als das!

Courgettes, melanzani, tomatoes and rosemary from the garden, the rest was bought in. I started with the potatoes, as they have the longest cooking time in the oven, and then gradually added the other vegetables.

Inzwischen hat das Salz Flüssigkeit aus den Melanzani (Ach, das sind Augergine für alle die es nicht wissen) gezogen. Diese abtupfen und mit dem restlichen klein geschnittenen Gemüse (Tomaten, Champignons wieder mit etwas Öl/Gewürzen schwenken und ebenfalls in den Ofen damit.

I had planned to bake a fig with feta cheese, but the oven seemed so full already, so I left the fig as it was for dessert.
Eigentlich hatte ich geplant noch eine Feige mit Feta Käse mit zu überbacken, aber der Ofen erschien mir schon so voll, also blieb die Feige zur Nachspeise einfach so wie sie war.

After ia total time of 30 Minutes, when the oven vegetables are cooked through and crispy to your liking, they are ready. Put them on a plate, salt to taste and and enjoy your meal
Nach insgesamt ca 30 Minuten, wenn das Ofengemüse durch ist und euren Wünschen bezüglich knusprig entspricht, dann ist es auch schon fertig. Auf einen Teller damit, nach Belieben salzen und guten Appetit :-)

If (which rarely happens to me) there is anything left over, the vegetables will definitely keep in the fridge until the next day and are also delicious eaten cold!
Falls (was mir selten passiert) etwas übrig bleibt, dann hält sich das Gemüse auf jeden Fall bis zum nächsten Tag im Kühlschrank und ist auch kalt gegessen vorzüglich!
