I remember that day I informed the whole house I was going to cook Jollof. That jollof disgraced me, my family, my unborn childrenā¦.Charley Charley. On the brighter side, there was a really huge party for the cats at home. That was main reason why I changed my favourite food from Jollof to bread and egg because no matter how hard I tried, I couldnāt make it.
After careful consideration and evaluation, I came to a conclusion that Jesus didnāt die for me to come and suffer this much, do all these Pythagoras theorem and integrate a lot of things just to enjoy something for the next five, ten minutes? Iām sorry but thatās not me.
Okay, rewind rewind. Ever since I realized my destiny wants nothing to do with the stress that comes with cooking jollof, I have resorted to crowning banku on top of my list. I think those who know how to cook jollof especially Ghanaian jollof have superpowers. Itās very complicated for me.
What do you mean I should cook the stew but not cook it and then pour the rice and cook the stew and rice. I know I know, youāre probably as confused as I am. I mean itās totally worth it though because the result is pure bliss. I guess all great things require a lot of effort.
Okay now, letās talk about my princess, banku. I love banku so much. I always have banku in my kitchen. I remember some years ago, they announced on radio stations about an earthquake or some sort of natural disaster. A lot of my neighbors came out with their phones, laptops, money, you know, things that seemed important to them. Well, there was also me carrying the food warmer which contained banku.
My family together with my neighbors laughed at me for about weeks after the incident which still makes no sense to me. You all clearly took things close to your hearts so why should I leave my loves behind? Banku doesnāt really go bad so easily. You could keep banku for about a whole month and nothing will happen to it. It can also be eaten with anything. From stew, soup, pepper, fish.. anything at all. Jollof is just for aesthetics but banku does the job!
Banku is made with corn dough and cassava dough. After mixing the dough, all you have to do is to stir till it gets hard and youāre done. You see? Very simple. āAināt nobody got time for jollofā Food that you have to be running anytime you want to checkā¦āeiii the jollofā.
Someone said no matter what happens, you never inform anyone, youāre about to cook jollof. If not, it will disgrace you, your family, your friends and your generation to come. As someone who wants nothing to do with disgrace, I wash my hands from jollof case.
Well, thatās not how my banku is. God really bless God for creating corn and cassava. Yes! Ghanaās economy is nothing to write home about but we have banku to console us and be there for us through thick and thin. At this point, can we just vote banku for president?

When I saw the title, I came in here hoping and expecting to see something along the lines ofā¦ āso I have to tell you, itās spectacularā but Omohā¦ so Iām not the only person that struggles with that thing? Looooool. I canāt kill myself abeg. On the other hand, Banku looks a lot like Okra soup or draw as we call it here.

Ooh you have made me hungry now. See just send that jollof rice through the next flight coming to Nigeria , make it more than one plate abeg. I have never tried Ghana jollof before and I have seen alot of hype around it so it will just be nice to know what people see in it and if it is better than our own jollof rice as they normally say.
