How to Make Nigerian-Style Veggie Scrambled Eggs

In this post I will be sharing with you how to prepare a delicious Nigerian style scrambled eggs that is filled with so much veggies. It is perfect to combine with some bread, boiled or fried yam, plantain, potatoes and so on. This recipe can be adjusted in so many ways. You can add some yellow, red or green bell peppers, green beans and even some sardines or deboned fish.

Ingredients

  • 5 eggs

  • 5 medium-sized tomatoes

  • 8 carrots

  • 4 scotch bonnet peppers

  • 1 onion

  • 2- 3 tbsp Vegetable oil

  • Seasoning cubes

  • Salt

Step by Step

  • Start by washing your tomatoes, carrots, scotch bonnet peppers, and onion thoroughly.

  • Then slice the them into small sizes or your desired sizes.

  • Set all of them aside.

  • Next, break your eggs into a bowl and whisk thoroughly and set aside.

  • In a frying pan on medium heat add some vegetable oil, let it heat up and add your onions.

  • Allow it to saute for a few minutes before adding your sliced tomatoes onto the frying pan.

  • Stir occasionally to prevent burning and allow to cook for about 3 minutes.

  • Next, add your scotch bonnet peppers and stir all together. Let all cook together for another 3 to 5 minutes while you stir at intervals.

  • Now, season your sauce by adding salt and seasoning cubes or any seasoning of your choice.

  • Next, pour in the eggs when the sauce is well cooked.

  • Just before you turn the eggs add your carrots. Remember that the goal is to ensure the carrot is still crunchy. Then mix all together and allow it to simmer for few minutes before turning off the heat.

  • Serve and enjoy with some bread, fried or boiled yams, boiled potatoes, fried plantain and so on.
