HOW I MADE EXQUISITE EKURU AND A RICH FLAVOR-PACKED SAUCE TO ACCOMPANY IT

In this post I will be sharing with you how I made ekuru and an exquisite sauce. Ekuru is a traditional dish that is popular among the Yoruba people of South-Western part of Nigeria. It is enjoyed by everyone from children to adults and it is often prepared for special events, family gatherings or even as simple as a meal for lunch or dinner.

Ekuru is made from beans but what makes it unique is the special sauce that accompanies it. Unlike, moimoi which is also made from beans and steamed in leaves, ekuru is prepared plain without pepper, oil or spices. The sweetness and richness is embedded in the sauce that is served with it. So, it is important you prepare your sauce to perfection and lock in every flavor as much as you can.

The sauce can be made as rich as you have the financial ability to. You can add variety of proteins such as fish, chicken, snail, eggs, and of course assorted meats.

Interestingly, it is best served on the leaves, the local way, you know.

There's nothing stopping you from sharing this exquisite delicacies. You may opt for an aluminium foil, nylon pouches etc.

Ingredients

  • 4 cups of beans

  • Leaves

  • Tomatoes, pepper and onion mix

  • Locust beans

  • Palm oil

  • Fish

  • Chicken

  • Salt

  • Seasoning cubes

Step by Step

  • Start by washing the beans thoroughly and remove the skin.

  • Next, grind into a smooth paste using your blender.

  • Then use a spatula to mix the beans together until it is fluffy.

  • Remember not to add salt, seasoning cubes nor oil.

  • Next, gently pour the bean paste into leaves, seal properly and place in a pot. Arrange them carefully one after the other.

  • Then add some water to the pot and steam until the ekuru is well cooked.

  • Then set aside.

  • Next, to prepare the sauce, heat some palm oil in a pot.

  • Meanwhile, you can fry boil and fry your fish, chicken, assorted meats and set aside. Also, boil your eggs in a separate pot. You will be adding them to the sauce later on.

  • Now, pour your tomatoes,, pepper and onion mix into the plam oil that has been heated.

  • Then add your salt, seasoning cubes, locust beans and crayfish for taste.

  • Let the sauce fry properly before you begin to toss in the boiled eggs and fish and chicken.

  • Let it all simmer together before you turn off the heat.

  • Serve and enjoy.
