Roasted and pureed our pie pumpkins today.
Made about 8 cups of spiced pumpkin butter that I can use in baked goods or on top of bagels or biscuits
I haven't bought canned pumpkin in YEARS because it is so incredibly easy to make on your own!
The key is to roast it and puree it in a food processor with just a bit of water.
Turns out perfect!
