Moules à l'escabèche
Salut à tous, des moules à l'escabèche à manger froid ou chaud.
J'utilise des moules déjà cuites et décortiquées, avec beaucoup d'oignons, de l'ail, du concentré de tomates, du vin blanc et du vinaigre.
Faire revenir les oignons.
Déglacer avec le vinaigre et le vin blanc et ajouter le concentré de tomates.
Bien laisser réduire, éventuellement lier avec un peu de maizena et ajouter les moules.
Je le sert avec du riz, mais vous pouvez aussi le proposer en apéro avec des petits toasts grillés.
