After realizing I didn't have any pasta for my pasta dinner, I saved the day meal with some quick DIY pasta made from chapati flour.

First, A Podcast Nap πŸ‘‚

Β  Β  Β I was running low on sleep as usual today, and apparently so was Monkey-B, because our attempt at relaxing horizontally while listening to a podcast together resulted in us falling asleep for an unknown amount of time. This is a rare treat for me because something inside me just won't allow me to sleep during the day, well, at least not some proper REM sleep.

Β  Β  Β I awoke before Monkey-B and knew that everyone would be hungry soon, so I started cooking before Monkey-B got "hangry."

Soya Chunks πŸ”₯

Β  Β  Β The dish I wanted to make was a vegan version of Cincinnati Chili, one of the few American dishes I actually enjoy, and it happens to be a family favorite. Part of the fun is that you get build the plate yourself, adding the pasta, chili, raw onions, hot sauce, crushed crackers, and beef soya chunks to your liking.

Β  Β  Β As I was frying soya chunks I realized the nearest package of pasta was hundreds of kilometers away πŸ˜†.

DIY Atta Pasta 🍝

Β  Β  Β I was bummed to realize I'd have to make my own pasta to save this meal, and time is never something I have much of. I didn't photograph it because the meal became very rushed, but I whipped up a massive batch of chapati dough and decided to roll it out and cut it with a bench scraper. I called in the troops for backup, even waking up Monkey-B to have her help with getting the pasta separated and ready to quickly drop in the water.

Β  Β  Β When we finally sat down to eat my chapati pasta, the ladies commented that this pasta was softer and superior to the packaged stuff we normally use. Well, I guess this means future versions of this dish will be made with my bench scraper chapati pasta, haha.

Β  Β  Β Cincinnati Chili is Monkey-B and I's favorite dish, and I am guilty of cooking sometimes just because I know she'll dance around the house and give me lots of hugs and emotional support. I have seen this little girl eat three massive bowls in one sitting, defying the physics of such a small human tummy and what it is capable of holding.

Children grow up takes a lot of energy to build their physique. My kid takes up to 3000kcal a day and doesn't grow fat. It does make sense when you factor in she grow taller every year.

The chapaghetti looks like freshly boiled mushroom to me. Bet they taste nice. Next time, perhaps you can ramenized your pastas like the Chinese ramen.

Hand-pulled noodles exist in Cambodia, but I wouldn't say they are common. Our former town had a Khmer-Chinese restaurant with a noodle puller located in a place for all to see. We enjoyed going there, but their broth was some of the worst I've ever had. made the noodles not so appealing.

I would love to learn this technique, but definitely would have a dusty kitchen when it's all done. I'm sure with a little practice though you could get used to making noodles quickly. I am very good with Indian style flatbreads, but it took some years to truly master.

There is no greater happiness than preparing a romantic dinner party for the family.

If I'm honest I'm very jealous of you, you show something I've never done for my family, I've never really enjoyed a complete family dinner like you did.

Indeed I'm not as busy as you, I'm just a laborer who works for 8 hours a day, and it really makes my time not available for family togetherness like you, it's not that I don't want to be like you, but circumstances force me to only see the romance of your family dinner.

I understand your situation brother. Several years ago we ran a restaurant in our home and I also taught classes in the evening. In those days we made good money, but I had very little time to spend with the family, and I was sometimes too tired for dinner. I am glad Hive gives us a little more economic freedom and the ability to live in the countryside and monetize our time together through blogging.

Life is very dynamic, and I have done many different things for money and lived in many different places in Cambodia, and even though I am not making as much money as I have in the past, I am thankful for the time I am able to spend at home with family these days. I hope in the future for both of us that Hive continues to give us more economic freedom and more freetime to spend with our families. There is nothing more valuable than time in this world.

well it's great that everything worked out in the end. I've been in a similar situation and my experience is that if the sauce is good enough, the delivery mechanism that it is placed on top of isn't really all that important.

This sage sauce advice could be used for many other situations in life, makes me want to create an ASEAN Hive famous quotes book. Unfortunately the pasta I made is better than the stuff from a package according to the fam, so it's likely they'll never let me buy bagged pasta again.
