Ingredients
• Okoro
• Protein, you can use any protein of your choice, beef, chicken but I would be using fresh fish.
• Vegetable
• Red oil
• Pepper
• Crayfish
• Maggi
• Salt
• Onions
• Ugba (oilbean)
• Kanda
Procedure
Firstly, I wash my fresh fish and steam it using onions, Maggi, salt and pepper. I allowed it to steam for sometime but not too long. I prefer my fish in whole not in pieces. while I prepare other things.
I wash my okoro and cut into tiny pieces,there was this manual cutter I was using before then but it was too slow and I couldn't wait any longer so I have to use knife to cut the okoro though I hate using the knife because it gives me scratches on my thumb. I didn't have any other choice.
I went ahead to select my vegetables which I wash two times using salt and slice into pieces. I wash and pounded the pepper with Crayfish and cut the onions into a plate. I wash the kanda and put into piece in a clean bowl same with Ugba. My condoments are ready, let's dive in until preparation of the soup.
Everything all set, using a clean pot, add a minimum amount of red oil to it not too big and not too small but a moderate quantity for the soup then I add some chopped onions. As you can see on the image below.
Next I add my okoro and stir for a while before I allowed it to fry for sometime.
After which I add my fish stock.
I add my already washed ugba and stir.
The soup was so thick so I have to add some water, there wasn't much water from the fish stock. I added pepper and the already grounded crayfish, salt and maggi for taste and stir before I allowed it to steam for a while for the ingredients to mix up.
After about 8 minutes, I add my already sliced vegetables. Taste for salt before I allowed it to steam for a while before bringing it down.
Okoro soup is ready. I went ahead to put some water on fire for making of garri. You can have this soup with garri, fufu, pounded yam or anyother swallow. My preference is fufu but since there wasn't any fufu I have to make use of what is available.
After my water boiled, I made garri and Tula my okoro soup is ready to be consumed. What do you prefer to eat your African Okoro soup with?
