Introduction
Hello all, hope all of you are doing fine. Once in a while I will be exploring interesting food places and today I would like to talk about this Nasi Lemak stall that is in my neihbourhood

Nasi Lemak Ayam Taliwang

You must be thinking why do I even want to do a post on this when it is just a local delight that many would have already known. But today, I would like to focus on the business model of this particular chain that allowed them to explode into so many outlets after being launched a few years back in Yishun Park Hawker Centre.

They boast specially grilled chicken being used with their rice (Nasi Lemak meant fatty rice) and a special chilli that goes well with the chicken.

But when I first had their Nasi Lemak, they have so many different chilli sauce variant that is being served and that is what defines their menu.

The following variants are served with only the chilli sauce different:

  • Taliwang (their signature)
  • Cabe Ijo (green chilli sambal)
  • Kecap sambal (sweet soy sambal)
  • Balado (hot and spicy bumbu)

With this 4 different sauce, it already creates 4 different variant of nasi lemak which the other items such as chicken wing, otah and other usual ingredients which are either processed food or easy to prepare food make up the full suite of nasi lemak available for us to order.

Personally, I feel that this is a very lucrative business if one just tinker one major item in nasi lemak. In Singapore, there are others that tinker with the chicken be it fried or grilled or even using different marination to make it standout. And this stall tinkers with the sambal which I would say is the soul of the dish as well.

There are no lack of nasi lemak stalls found around the island but in oder to anchor a place for yourself and thrive in Singapore where everyone is very picky on their food, having 34 outlets islandwide is a real deal and a very good achievement.

And here's how a typical set looks like:

Nasi Lemak Ayam Taliwang

Nasi Lemak Ayam Kecap Sambal

As you can see, the only difference is really on that one sauce and nothing else.

Personally, I like the Kecap Sambal over the signature Taliwang sauce. The Taliwang sauce is spicier and packs more punch, my wife likes it but I think the Kecap sambal with a hint of sweetness blending with the spiciness of the sambal ticks all the box for me.

There are 2 others which I haven't get to try, so the other 2 might be hidden treasures that I have yet to discover and who knows, I might like their taste better than what I had tasted so far.

Closing

I think in the modern day, having a thriving business is not an easy thing and I have to say that from their humble beginnings, Nasi Lemak Ayam Taliwang had already expanded to such a big scale across the island is really a great achievement. Well done on the business model on varying the sambal for people to choose and keeping the menu tight to ensure no excessive wastage.

Thank you for coming by and have a great day!
