Day 15 - Homemade Soup
I got inspired by the "30 day not-so ordinary ordinary items challenge" but as I love giving things a personal twist, I decided to change the format a bit for myself so it suits me better. I've adjusted it to the 30 pictures - 30 stories challenge. But some days you will see that I also use not-so ordinary ordinary objects.

Publish one picture a day during 30 days and write a story about that picture. This can be anything, any object in the home, a person, scenery or a pet. I'm going to share a diversity of pictures and challenge myself to step outside of the box.
Today it's another food post I'd like to share with you on day 15 already, halfway through the 30 day challenge! I know many people love to eat soup, I was just not one of them. I always enjoyed soup like once a year tops because you could simply not get me warmed up to eat it. I never really felt the excitement for a soup dinner or lunch to be honest. I guess I missed my calling regarding trying out soup recipes as the soup department was always my boyfriend's. I had a few of these dinner recipes that I didn't feel like making myself so I never did.
That changed a few weeks ago when I finally went ahead and created a version inspired by three recipes I found online when I was looking for soup with a coconut milk inside. I realized that it may be a good fit when I was looking inside the kitchen cabinet and found 3 unused cans. When browsing for ideas, I found that there are loads of combinations that can work and I had a lot of vegetables in the fridge that I could possible use as ingredients. I even ordered yucca for it the week before but as these were frozen, I wasn't in such a hurry to use it.
Although I saw a lot of options with many ingredients, I decided to first test it out with a few ingredients that would probably also make my daughter happy (which I find important as she refuses a lot of food, lol) and therefore I went for a few ingredients:
Fruit the onions in some olive oil until soft, add the fresh garlic and then top it off with a liter of broth (I used vegetable broth as I had it in the cabinet and it was a good combo). Now simply add all the cut vegetables and leave on the fire for about 45 minutes. Top it off with the coconut milk and add pepper, salt and Maggi .. Enjoy!
I never thought I'd say it but I'm now a soup fan and suddenly see a world of possibilities regarding other variations of this soup. I absolutely enjoyed every sip of it and I could not wait until the next day for lunchtime to eat the remaining part of it, lol.
The best news: my daughter is a fan too! Double WIN!

Looks amazing @thisismylife !I do enjoy soups, though its been times I was enjoying them moreeeeee than I do now. Still, I love a good soup. And this looks like that: delicious.
I am having right now a mug of bone broth. Not as good as this soup here, but it works! 😁
Ah thank you @missdeli, it's such a simple thing to make and I truly enjoy it. I haven't even started mixing up the ingredients yet (only with or without chicken because my daughter requested it)..
Enjoy your bone broth! I tried making that once and it was a total failure, need to do a retry once in the future.. not now though as I have a ton of broth in stock thanks to getting 50% of the value back in savings lol
Actually, it happened to me too not to make a good bone broth. But I do know why. When I use to many ingredients and spices like cinnamon and pepercorns, anise start and rosemary, the taste is not soo good.
So if I skip those and only use small amounts, I found it delicious.
Its good that your girl likes the soup too. I always feel like heaven when my son approves the food I make, especially that your little girl is more picky, if I remember it well.
The bread reminds me of what I made last week haha. Would love to try this recipe when I can. It's now perfect weather to have warming dishes like that.
I honestly really never enjoyed soup much, with a few exceptions. It was just never one of these things that I could motivate myself to make, this one is already been made 3 times since I first tried it, lol.
I discovered I love the yucca potatoes a lot! So soft.. I didn't even add chicken this time as I don't even miss it (didn't have chicken the day I made it). So many other varieties to try with the broth and coconut milk base.
It was also the first time I bought liquid broth from the supermarket rather than using broth in cubes or powder. I have to say, I'm a true fan of this now. They also have it in chicken and fish etc but I think this one is a good fit for many varieties so for now I'm sticking to this :)
