Some Foods Bring Back Memories of a Special Person

One of the common dishes you’ll see in an eatery in the Philippines is pork giniling with potatoes and carrots. That’s really the usual way pork giniling is cooked here.

I remember back when I was still working at a manufacturing firm, I had a colleague who became my best friend. Every time pork giniling was served in the canteen, that was always what she ordered. So when my mom says we’ll have pork giniling for dinner with potatoes and carrots, I suddenly remember my best friend.

While I was preparing the ingredients, I found myself smiling as I thought of her. She was such a jolly and cheerful friend. Whenever they had occasions or celebrations at their house, I was almost always there because I had also grown close to her family.

It’s been a long time since we last saw each other, especially after I left the company. And in that moment, I suddenly realized how much I miss her.

Aside from being jolly and cheerful, she was such a sweet friend. On my last day at that company, she gave me a letter. She wrote about everything, from the first day we met, to our tantrums, our crushes, our struggles, and all our happy moments together. While reading that letter, I couldn’t stop laughing. It brought back so many beautiful memories.

After I finished preparing the ingredients, I cooked the pork giniling the way I usually do. I put the ground pork directly into the pan without oil, letting it release its own fat. That natural oil is what I use to sauté the onions and garlic. Once the garlic and onions are added, I let them cook for a while before seasoning everything. After a few minutes, I add the carrots and potatoes. It’s really that simple to cook.
