Happy Tueday Hivers!

Did you know that in the Philippines, especially in the Visayas region, bottle gourd grows abundantly? Once it starts fruiting, it produces a large harvest.

This vegetable is commonly cooked with sardines in our household. Since it is very affordable in the market and widely available, especially during harvest season, my mother and I usually buy it. It is also very quick and easy to cook, making it a practical and delicious meal for everyday dining.

Let’s cook bottle gourd with sardines!

I used a peeler to remove the skin so I could finish faster. After preparing all the ingredients, I sautéed the garlic and onions first. Once they were fragrant, I added the sardines and continued cooking.

Some people prefer to cook this dish until it becomes dry, with no liquid left after cooking. But in our home, we like it with a bit of broth because it makes the dish more flavorful. So I just added a small amount of water, enough to create a light broth, not too much.

After adding water, I seasoned the dish. Then I let it boil for a few minutes. Once it was boiling, I added the bottle gourd and let it cook again until it became soft and fully cooked.

In the end, we had a simple but delicious meal made with affordable ingredients. The natural sweetness of the bottle gourd blends well with the sardines, especially with the light broth. It’s an easy dish that is perfect for everyday home cooking.
