Miki Guisado: A Simple and Budget-Friendly Favorite

Some days we crave something delicious and filling, but our budget doesn't always allow us to make an expensive meal. For me, this is when simple recipes become extra special. One of my all-time favorites is a dish we call Miki Guisado—a simple noodle recipe that is affordable, easy to prepare, and surprisingly delicious.

Miki Guisado reminds me that we don't need fancy ingredients to enjoy a satisfying meal. With just a few vegetables, seasonings, noodles, and a little meat for added flavor, we can already create something that everyone at home can enjoy. It is especially perfect when I'm on a tight budget but still want to make a meal that feels complete.

The main ingredient is, of course, the miki noodles. These soft, chewy noodles are perfect for stir-frying because they easily absorb the flavors of the sauces and seasonings. To make the dish healthier and more colorful, I like adding vegetables such as cabbage, carrots, beans, and red pepper. These vegetables not only add flavor but also give the dish a beautiful combination of colors. I also added meat to add more flavor

For additional flavor, I use soy sauce and oyster sauce, together with Vetsin and Magic Sarap. You can also add a small amount of meat to make the dish more flavorful. You don't need much meat. Even a little can already make a difference, especially when you are trying to stretch your budget.

Ingredients

For our simple Miki Guisado, we need:
Miki noodles
Cabbage, sliced
Carrots, sliced into thin strips
Beans, cut into small pieces
Red pepper, sliced
Meat of your choice, cut into small pieces
Soy sauce
Oyster sauce
Vetsin
Magic Sarap
Cooking oil
Garlic and onion, if available
Water, as needed

How to Cook Miki Guisado

First, prepare all the ingredients. Slice the cabbage, carrots, beans, and red pepper into manageable pieces. Cut the meat into small portions so it cooks quickly and distributes evenly throughout the noodles. Preparing everything beforehand makes the cooking process easier and faster.

Instead of frying the meat right away, I first boil it in a pan with a little water. I let it cook until the water gradually evaporates and the meat becomes tender. As the meat cooks, its natural fat renders. I let the meat cook in its own oil until it turns slightly brownish and nicely fried. This method works well for me because I don't need much cooking oil, which makes the recipe even more budget-friendly.

Once the meat is browned and its natural fat has rendered, I add the garlic and onion directly to the pan. I sauté them together with the meat until the garlic and onion become fragrant. The meat's natural fat gives the aromatics extra savory flavor, making the base of the Miki Guisado even more delicious.

Next, add the carrots and beans. Stir-fry them for a few minutes before adding the cabbage and red pepper. I like keeping the vegetables slightly crisp because they give the noodles a wonderful texture. Adjust the cooking time based on how soft you like your vegetables.

Once the vegetables are cooked, add the miki noodles. Mix carefully so the noodles don't break. Add soy sauce and oyster sauce to taste. Sprinkle a little Vetsin and Magic Sarap to enhance the flavor. If the noodles seem too dry, add a little water and keep mixing until the sauce is evenly distributed.

Continue stir-frying until the noodles have absorbed the delicious flavors of the meat, vegetables, and sauces. Taste and adjust the seasoning as needed.

And that's it! A simple plate of Miki Guisado is ready to serve.
What I love most about this recipe is its simplicity. It doesn't require expensive ingredients, complicated cooking techniques, or much time. It is a practical meal that can help us make the most of whatever we have in the kitchen. We can even adjust the ingredients depending on what is available. If we have more vegetables, we can add more. If meat is limited, we can use just a little. The important thing is making something delicious without spending too much.

For me, Miki Guisado is more than just a noodle dish. It reminds me that good food doesn't always have to be expensive. Sometimes, the simplest meals become the most comforting, especially when shared with the people we love.
