There are moments in life that are peaceful, comforting, and unforgettable, like a warm embrace from the universe. My friends and I recently decided to have a great yet simple supper by the water, and it was one of those moments for me. Mariz, Angel, Joemet, and I were a close-knit group of friends who had stood the test of time, laughed together, and experienced life's highs and lows. That evening remains one of the most treasured moments we've shared.
We chose a modest, inviting diner situated away along the shore that is well-known for its perfectly grilled pork and authentic Chicken Inasal. Tables were placed immediately on the beach, allowing you to feel the grains underfoot while listening to the soothing sound of the waves lapping the shore. This location, along with the food, was what distinguished this restaurant from the others. We sat at our table, barefoot and happy, as the sun set over the horizon, painting the sky with pink and orange hues.
While we waited, the aroma of cooked meat filled the air, making our mouths water. The aroma of charcoal-grilled food, laughing, and sea breeze all combined to produce a particular kind of magic in the beach air. We couldn't help but be impressed by the simplicity and beauty of what we saw when our orders arrived: luscious slices of perfectly charred grilled pork and soft Chicken Inasal marinated in a wonderful blend of calamansi, garlic, and lemongrass. Each plate was delivered with the classic Filipino combo of garlic rice and a little saucer of hot vinegar.
As is typical, we began eating with our hands, and each bite was enjoyable. The grilled pig was tasty and perfectly fatty, the chicken inasal was sour and smoky, and the food made you smile and close your eyes. We discussed everything throughout that period, including our work, hopes, hilarious memories from the past, and future goals.
Angel, always the gentle and sentimental one, commented on how fantastic the sunset was and how fortunate we were to be there at that exact moment. At the same time, Mariz couldn't stop smiling as she told us a funny anecdote from her most recent trip. We were all giggling between bites since Joemet always had a joke up his sleeve. For my part, I sat for a while and let the joy of that simple gathering wash over me. I was deeply grateful for the excellent cuisine, the sea, and, most significantly, my family-like friends.
Unwilling to call it a night, we stayed a little longer as the sky darkened and the stars began to appear one by one. We were reminded of the importance of connection as we stood on that beach together, our feet in the sand, our hearts at ease. It didn't matter if our clothes were a little sandy or that we weren't staying at a nice resort. The emotion-the pure, genuine pleasure of eating with folks you care about—was what mattered.
Not only will I remember the grilled pig and chicken inasal from that beachside lunch, but also the warmth of the sea, the camaraderie, and the kind of laughter that lasts long after the evening is over. Sometimes all you need to be happy is a simple supper by the sea with good friends.
A simple yet heartfelt dinner like this truly shows how food, laughter, and good company make the best memories.
