Paneer Paratha (Cottage Cheese Stuffed Indian Flat Bread)

Ok, long story short. I have been super busy, and when I was not busy, been super lazy all of last month. That does not mean that I did not cook anything. I cooked basic food mostly Rice, dal and sabzi on most days. And on other days, used meals from the freezer, and on my laziest days, ordered a takeaway.

I'm feeling like myself for the past few days and I made Paneer Paratha (Flat bread stuffed with cottage cheese).

Let's get started.
Ingredients:

For the stuffing:
Grated Paneer (Indian Cottage Cheese) - 150 grams
Green Chilies - 1 (finely sliced)
Onion - 1 small (finely diced)
Garlic - 1 pod (minced)
Salt - as per taste
Garam Masala - 1 teaspoon
pepper powder - 1/2 teaspoon
coriander leaves - 2 teaspoon

For the dough:
Wheat Flour - 2 cup
Water - 1 cup
Salt - 1/4 teaspoon

Method:

For the dough, knead 2 cup of wheat flour with one cup of water and make a stiff dough. Depending on your flour, it may require a little less or a little more water. So add water a little by little.
Let it rest for about 15 - 20 minutes.

Mix all the ingredients for the stuffing.

Take a medium size ball dough and flatten it. Put a large spoon full of the stuffing and close it, into a ball and flatten it.

Dust the surface with some dough and roll out the paratha. Don't roll out the paratha too thin.

Heat a pan, cook paratha on either side for about 2 minutes on each side. Keep turning it every 45 seconds or so. Add ghee on both sides of the paratha.

And that's it.

Enjoy with some pickle and yogurt.
