Saturday is Snackday for us

My partner and I have somehow gotten into the habit of treating ourselves to a few tasty snacks on Saturday evenings. Saturday evening is "our" evening to relax, watch a movie, and just enjoy each other's company, and that includes a nice snack. We usually keep it very simple, just a nice cheese, or vegetarian spring rolls from the oven, sometimes even just a simple bag of chips. But sometimes, we want to unpack and that was last Saturday. My partner had found a nice recipe on the internet that neither of us had heard of before. It seems to be sold as street food in Russia. Even though we were certainly not going to eat it on the street, but just lazily in front of the TV, we still wanted to try it because it sounded like a tasty snack for a Saturday evening.

Now I must say that we have already read that the filling can be completely adjusted to personal taste, as they seem to exist with many different fillings. So in the end we also made our variant of the recipe we saw with minced meat. We changed that to vegetarian loose minced meat. The beef stock in the recipe has been changed to vegetable stock.

On Friday my partner brought all the necessary ingredients and when he got home he said, "I can't imagine they can sell something as cheap as street food". The ingredients cost quite a bit in our supermarket, but I have to say that we have had the feeling here for a long time that we are being ripped off. LOL. Anyway, everything was in the house, so on Saturday, the adventure in the kitchen could begin. And let me tell you, that was a bigger adventure than I had anticipated. The final result was impressive. It was delicious!

Preparing the Piroshki

The dough, the basis of our Piroshki, was a so-called sour cream dough. Although we replaced the sour cream with yogurt (yes, the sour cream was too expensive).

  • 190 grams of flour
  • ¼ teaspoon of salt
  • ¼ teaspoon baking powder
  • 100 grams of unsalted butter, cold in cubes
  • 1 egg yolk size L
  • 5 tablespoons Greek yogurt

So you start by mixing the flour, baking powder, and salt. Then add the butter and knead everything through, then add the egg yolk and yogurt and mix well until you have a smooth mass. Once you have done this, wrap the dough in plastic wrap and place it in the refrigerator for at least an hour. Please note, it is a sticky dough!

After making this I started on the filling. For the filling, we chose what we thought was a delicious combination of onion, garlic, vegetarian minced meat, dill, parsley, boiled egg, yogurt, boiled egg, flour, and vegetable stock.

I will also share the exact quantities:

  • 1 onion, chopped
  • 1 clove of garlic finely chopped
  • 1 container of vegetarian minced meat
  • 1 boiled egg
  • 15 grams of fresh dill
  • 15 grams of fresh parsley
  • 5 tablespoons Greek yogurt
  • 1 tablespoon of flour
  • 2 large tablespoons of vegetable stock

The dough needs a filling!

I made the filling as follows. First I started by frying the chopped onion, when that was almost done I added the finely chopped garlic and chopped the vegetarian minced meat. I fried it all briefly and then poured it into a large bowl. The egg had also been boiled in the meantime and after peeling I neatly cut it into small pieces and added it to the meat mixture in the large bowl. Now it was allowed to cool covered in the large bowl to room temperature.

In the meantime, you can finely chop the fresh herbs. When the contents of the bowl have cooled, you can stir in the fresh herbs and the rest of the ingredients. And then your filling is ready to be used.

In the meantime, the dough has been chilled and waiting. Remove from the refrigerator and roll out the dough until you have a large slab about half an inch thick. You cut out circles of about 10 centimeters there. Place the filling in the center of each round, keeping in mind that you will fold the dough in half. When all the rounds are filled, place the whole thing in a preheated oven (convection 180 degrees) and bake for about 15 to 20 minutes.

Authentic or not, they were so good!

Now I must honestly say that I have no idea whether our Piroshki turned out to be that authentic in the end. But that didn't matter anymore because when we finally got around to tasting them, we were immediately sold. Authentic or something completely different, it was certainly a delicious snack for the Saturday evening that we thoroughly enjoyed. The taste was perfect and the dough was even more perfect if possible. These types of snacks often become dry and hard quickly, but nothing like that. The dough was exactly as it should be, not hard, and not dry with a special taste to it.

Regardless of whether our snack was a perfect Piroshki, it is certainly a recipe worth repeating ng is amenable in terms of taste, but whether I will soon feel like standing in the kitchen for so long for a snack is another question. It is nice to make a kind of trip to another culture in this way. Let's look on the internet again to see if we can discover other snacks from other cultures.
