We Are Alive! October 13th, 2024 Bok Choy Harvest

We harvested our Bok Choy today. They grew to be much larger than what is found at the store. I think they bind them up when they're young and harvest them before they get "leafy".

Ours looks more like a houseplant!

A single stem shows a nice white and firm stem, which is the desirable part of the plant. It's often used in asian style soups.

The harvest is great, but we have a lot of washing and dividing to do before we're able to blanch and freeze the stems and leaves.

Bok Choy is very healthy, which is why we are growing and incorporating it into our diets.

Bok choy contains a wide variety of vitamins and minerals. It’s particularly high in vitamins C and K. It also offers some fiber, an important nutrient for overall health. Bok choy is rich in antioxidants that may offer benefits for thyroid function and heart and bone health. They may even have anticancer properties.

They look very much like "Swiss Chard"... I haven't grown Swiss Chard for a long time, but I use to Boil it, Drain it and add Butter... I loved it... I may try growing it again, "if" I can find the Seeds...
