CREATIVE-SUNDAY: Vegan Delight Curry Carrots Soup Recipe π±π₯π²
Greetings dear lovely Community. By now we are all settling into the New Year, making plans and resolutions. One thing I know that is for sure is good healthy lifestyle and living helps to energize us to achieve every set out goals and objectives. So while making resolutions, we must not forget to prioritize our health and this calls for healthy meals.
Vegetables π₯¦π₯π₯and fruits πππare the two most precious healthy sources of vitamins and these two should be always be inculcated in our meals which ever way we want to incorporate them.
And this is why in my todayβs Creative Sunday, I made a curry π carrots π₯ soup π², adding to it other healthy vegetables and spices that made it a delicious vegan π± delight.
Here I will take you through the ingredients and tutorial of how you can prepare this delicious delight at home to enjoy with our family and friends:
INGREDIENTS:
3 large finger carrot
1 large cucumber π₯
1 tablespoon of margarine
1 medium size onions
1/2 of bell pepper
1 medium size cherry tomatoes
A thumb size ginger
3 cloves of garlic
2 hot peppers
1/2 teaspoon of thyme
1/2 black pepper
1/2 teaspoon of sea salt
1 Soy cube
1 teaspoon of curry powder
STEPS FOR PREPARATION:
Step 1.
I will start by cleaning, washing , cutting and dicing the vegetables. First the carrots π₯
Step 2.
I will also wash , cut and dice the cucumber π₯ and the green pepper.
Step 3.
I will wash and cut slice the tomatoes π , onions π§ , garlic π§ ginger and red chili to keep readily.
Step 4.
And we have these vegetables readily sliced to move to to prepare them.
Step 5.
To stir-fry this soup π², I will heat up the pan, add the margarine to melt, then will add the onions, garlic and ginger. Allow to tender as it fries on.
Step 6.
Once it tenders, I will add the tomatoes π the chili πΆ and the bell pepper. Stir to incorporate and allow to continue frying.
Step 7.
Next is to add the diced carrots, Add the cucumber π₯. Stir together properly .
Step 8 .
And finally will add little water to the soup,. This will boost every juice to mix with each other. Then add salt, black pepper, thyme, curry and cube.
Step 9.
And I will allow to boil and cook, incorporating together the deliciousness of the healthy vegetables π₯.
What a healthy vegan delight we have here. This soup is full of deliciousness and good health. All we need to keep energy and healthy. We can serve with warm rice π, spaghetti π or even scoop it warm during cold winter βοΈ, rainy βοΈ days.
