I always love the fact that yam slices can be used to make one of my favorites. The process involves getting a very good yam, washing, peeling, and drying them. The last part is grinding it into powder form using a big grinding machine. Then voila! You get Yam Flour!

What an interesting ingredient, Yam Flour. What is it used in? And how does one "dry" the yam?

Yam flour is used to make a Nigerian food called "Amala" which can be eaten using different kinds of soup.

The yam slices can be placed in a large tray and spread under direct sunlight(it can be dried for more than one day, depending on the quanity of the yam slices).

Sounds interesting. I love the sweet orange yams (called sweet potatoes) I'm used to in the U.S. and cook them with sugar and spices to make a sweet side dish or a sweet potato pie. I published a post on how we cook it for special occasions or the holidays because it's very sweet.
