Didn't Feel Like Going To The Store

Sometimes you have days when you should go to the store for groceries, but you don't feel like going when your partner finally comes home from work in the car. I didn't think it was the best idea to go earlier while a storm rages over the country and the rain hits you hard in the face as soon as you step outside. So I dived into the cellar, accompanied by Skipper, who always finds the cellar a very interesting place in the house. Myla also poked her snout around the corner for a moment but soon gave up.

While I was chatting with Skipper I looked around to see if we had anything interesting and mentally wondered what might be in the fridge. When my eye fell on a can of chickpeas, I had an idea. Coincidentally, earlier this week I had been reading a recipe for chickpea burgers. I've made them before, they taste great, and now and then it's okay to have a burger sandwich for dinner.

Coincidentally, there was still arugula in the refrigerator. We also had sandwiches, and I think we had the rest of the ingredients I thought we needed at home. So it was settled. I was going to make chickpea burgers.

Chickpea Magic

Chickpeas are a very tasty meat substitute, but other than that they are also healthy. They are rich in proteins and fiber, but did you know that they also contain a whole host of healthy, important nutrients? Seriously, there's a lot of iron, magnesium, and folic acid in these little yellow things. You can also do much more with it than only make burgers, but I will return to that another time when I feel more like making a culinary creation. This time they were going to turn into simple, but tasty burgers!

Flavors and Aromas

I already said it, because I didn't feel like going to the store, I didn't have much choice to be creative with the ingredients, or creative because I had to make do with what I had. It just depends on how you look at it. In any case, here is a simple basic recipe, and of course you can adapt it to your taste. That's always the nice thing about recipes.

Ingredients

  • 1 can of chickpeas
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • cumin seed
  • curry powder to taste
  • Salt and pepper to taste
  • 1 half leek (I used Leek due to lack of parsley)
  • half a cup of water
  • Optional: chopped fresh herbs such as parsley or coriander

Instructions

Combine all ingredients in a large bowl except the breadcrumbs and mix until smooth. Once you have finished this, slowly add the breadcrumbs until you reach a consistency that you can make into burgers.

To make the best burger, first roll it into a ball, flatten it, and then you have a burger. If you want to do it completely neatly, you can also cut them out with a shape. I did that and then it was time to bake them. And serve the sandwiches! I gave the sandwiches a generous layer of arugula... you want something green during your meal.

Creativity in the Kitchen

One of the great advantages of chickpeas is that you can combine them with all kinds of things. And you can also use your creativity to make a burger. It doesn't have to be standard, and it doesn't have to be boring. You can throw in whatever you want... Be creative, or work with what you have as I did. LOL. To be honest, if I had parsley in the house, I wouldn't have even thought to throw in the leek. Coincidentally, it turned out that way, and it tasted good too! It's an "easy fix" when you don't feel like going to the store, and it's easy to make.

As true vegetarians, we thought it was a very successful burger sandwich, even if it had only come to this by pure chance. My partner recommended it and he thought it was a shame that I hadn't made more burgers to freeze. In any case, that was a nice compliment, and I now know that I will be able to make burgers again soon. I'll make more next time...

Love chickpeas but my hubs can't eat them, so never have them in the house! White beans and black beans instead ❤️

Everything for the love right? To be honest, I think my guy would be just as happy with that, if not even happier. He really loves everything called ¨beans¨. Hmm, that´s another inspiration there to get a bit creative in the kitchen again soon. ❤️

Thanks for the reminder! I seriously have 0 energy and feel like crap today, I barely ate anything yesterday so I was wondering what I can handle today which doesn't make me feel like "bleghhhh" haha. As you know I also have a newly found love for chick peas, but I definitely don't want to go to the hassle of soaking the dry ones I have now. Instead, I will just throw a flatbread in the pan which will hopefully give me a boost to feel a bit better..

The burger looks appealing enough to me to give it a try one day though :)
