It's a vegetable, and you can eat it. If you're familiar of pechay, they have similarities but I like the taste of pak choi compared to pechay, because pechay has a little bitter taste.
I see, it's similar to a pechay, we have here the pechay and it's being use for soup (chicken soup or pig soup) and it was delicious.
