Delicious Rice With Veggies Sauce And Plantain

I think @george-dee has influenced me; here I am making a post in this community for the second time.

I woke up this morning with a serious craving for rice and some veggies sauce but didn't have everything I needed at home to make the dish, so I decided to make do with what I had.

Ingredients
3 cups of rice
555 g of cabbage
5 big pieces of carrots
2 pieces of spring onion
2 cloves of garlic
1 teaspoon of grated fresh ginger
2 fingers of big plantain
7 pieces of fresh pepper
2 cubes of seasoning
A pinch of salt to taste
1 teaspoon of turmeric
Ā½ teaspoon of thyme and rosemary leaves
400 ml of groundnut oil

Preparation
I started by washing the rice, then placed it in a pot, added water and a little salt, and then allowed it to cook.

While the rice was on fire, I blended my fresh pepper, garlic, onion, and ginger and placed it aside.

Then I chopped my carrots into smaller pieces.

I placed my pot on low heat, put a small amount of oil into the pot, allowed it to get hot, then poured in my minced onion and allowed it to fry for 40 seconds.

Then I poured my blended ingredient into the pot, stirred it, and allowed it to fry for one minute.

I poured in turmeric, salt, and thyme, stirred, and allowed it to steam for a few seconds.

I poured my chopped spring onion into the mixture in the pot, put in my seasoning cubes, and stirred. By this time a sweet aroma had already filled the kitchen, and then I added my chopped carrots into the mixture. I stirred and allowed it to steam for about two minutes.

While it was still on fire, I hurried to chop my cabbage, and then I added it to the already cooked veggies in the pot and allowed it to steam for a few minutes.

When I was done with that, I hurriedly washed my plantains and cut them into smaller pieces.

I placed my pan on the fire, poured my groundnut oil in it, and allowed it to get hot. Then I put the plantains into the hot oil and allowed the plantains to fry.

After that I removed them from the fire.

Wow! I am actually salivating while staring at this sumptuous recipe you just shared. You honestly put in lots of effort and I wish I could have a taste.

My appetite has been terrible for weeks now due to my health but this will inspire me to make something. I have 95% of the recipe already and might just give this a try for dinner.
