I know this my recipe would sound weird and unachievable but guess what. It worked and was delicious. I love being creative and trying something new. I was heading to market on Saturday when I saw Onion and I inquired on the price. I ended up getting some and that served me my Onion Stew with egg.
The shining star in this recipe is the onion, followed by the eggs as protein. You don't need much ingredients to make this and it goes with rice, yam, among others.
Ingredients I used
Onion- that's the quantity l used in the picture.
Eggs- I used 5 raw eggs as a replacement for my fish.
Tomatoes
Cayenne pepper
Two cups of groundnut oil
Spices- curry
How Its Made
I started by washing all that I needed to wash, my onions, pepper and tomatoes. Since it's onion stew, I was very generous with onion, my kitchen was having this onion odour, even my hand because of the quantity I sliced.
After that, I chopped my tomatoes, this tomatoes is just little just to add a little bit of colour to the outlook. Blended my pepper, then, my eggs and set aside.
I got my frying pan on fire, add the oil and allow to heat on a medium heat.
Then I added a bit of the sliced oinion and stirred gently. After it softened, I added my tomato and fried. I continued the process of adding a good quantity of onion bit by bit until I got the softness I wanted, I added my pepper and stirred until it blend with the onion. This process is one you have to be consistent with stirring else it will burn beneath.
After getting the sweetness I wanted, I added my seasoning ingredients, this added another level of aroma to the stew. I stirred everything together and lastly, it was time to add the egg.
Gently, I poured in my egg into the stew and stirred. I allowed it to cook and blend with the onion. I wanted mine just as it is which is why i added a very little bit of water. I enjoyed this stew with a plate of rice, but it can good well with yam and even bread.
