For my entry to this week's HL Creative Sunday Initiative, I made a delicious and fluffy oven-baked fish roll. It's one of my favorite snacks and even though I don't eat often, I enjoy it whenever I do.
I believe it's a popular one among snack lovers and I'm glad to show you how I make my fish roll when I crave it. The process might look long but it becomes short when you've mastered the preparation very well.
Ingredients.

- Flour
- Fish
- Milk
- Butter
- Baking powder
- Eggs
- Chili Powder
- Onions
- Sugar
- Salt
- Groundnut oil
- Seasoning cube
Let's get to the preparation.
I started by making my dough and it's very simple to do.
- I first mixed all my dry ingredients (flour, milk, sugar, salt, and baking powder) in a container.
- I made a small space in the dry ingredients and added the remaining ingredients (egg and butter)
- I mixed again with my hands, ensuring that all the ingredients had mixed together properly.
- I added a small quantity of water repeatedly while mixing again until the mixture was moldable.
- From that point, I started kneading adding droplets of groundnut oil to prevent stickiness until I got a smooth dough.
- I kept the dough aside while I made my filling.
I have my fish shredded and eggs boiled already so let's just get straight to the point.
- I turned the fish, eggs, onions, and chilli powder into a bowl.
- I added salt little and seasoning cube, and groundnut oil.
- I mixed the whole ingredients in the container with a turning stick until they are blended into each other.
Immediately after the fish was ready, I picked up my dough from its resting place.
- I got my rolling pin, cut a small piece from the dough, and flattened it on my table.
- I put the fish filling at one end of the flattened dough and just rolled it up.
I applied groundnut oil with a brush on the fish roll.
I carefully put it on an oven tray and repeated the process for the remaining dough and fish sauce.
After exhausting them, I gently placed the oven tray inside the oven and left it to do its thing.


The outcome of the oven-baked fish roll was delicious, and I enjoyed having it on a beautiful Sunday like this.
