Magic Shikika Recipe: Crispy Anchovies Omelette ☺️😋❤️

Yesterday, I cooked a viand that I really love since I was a child, the Anchovies Omelette. Growing up in our village, fishing was the main source of living for most people. There were times when fishermen would catch a lot of anchovies. Me and my siblings used to run to the shore whenever they brought in their nets. We would pick up the tiny anchovies that slipped out and fell, and then bring them home. It felt like free fish for the whole family. One of the dishes we loved the most was having them cooked as omelette. It’s simple, tasty, and really close to my heart. ❤️

So when my sister bought anchovies the other night, my first thought was to make omelette out of it. She already cleaned them and removed the heads before putting them in the fridge. The next day, I knew right away what I wanted to cook for dinner. ☺️

We didn’t have flour anymore because I already used it all in making sardines fish balls. But I still had egg and a packet of breading mix, so I thought, why not? I used those instead and it worked out perfectly! ☺️❤️

So, let me share with you how I made my Crispy Anchovies Omelette. ☺️❤️😋

Ingredients:

For the omelette mixture,
✓ 1 glass anchovies (around 200g, heads removed)
✓ 1 medium egg
✓ ½ sachet breading mix
✓ Ground pepper (a little)
✓ Salt to taste

For frying,
✓ Cooking oil

For the dip,
✓ vinegar (spicy)
✓ 1 small onion (diced)
✓ 1 small tomato (diced)

Procedures:

  1. Prepare all the ingredients.

  2. In a clean bowl, combine the anchovies, egg, breading mix, salt and ground pepper. Mix well until everything is coated.

  3. Heat cooking oil in a pan.
  4. Once the oil is hot, scoop some of the anchovy mixture, flatten it on the pan, and let it fry. Flip both sides until cooked and golden brown.

  5. Repeat until all the mixture is fried.

  6. For the sauce, I dipped it in spicy vinegar with diced onion and tomato. It's simple but so perfect. ☺️😋❤️

And that’s it! Dinner solved and tummy satisfied. My sister even brought some with her to work today as her lunch. ❤️☺️

I really love how crispy and tasty this anchovies omelette turned out. It’s such a humble dish, but it brings back a lot of childhood memories for me. Sometimes, the simplest recipes are the ones that make us happiest. ❤️

Note: For this recipe, I actually used the same oil left from frying my sardines balls, so the oil in the photos is not that clear anymore. 🤭😁

Wow, I really missed eating omellete anchovies, My Mother always cooked this kind of dish when there are lots of anchovies to brought.

You can even ask your mother to buy plenty of anchovies again so she can cook more anchovies omelette for you. ☺️
