If you're not a fan of the bitterness of it, before you cook the bitter gourd, rub a lot of salt and then leave it for about 10-20 minutes after that squeeze the remaining juice and then rinse off the salt from bitter gourd and it is ready to be cook, almost all the bitterness is gone if you do this process.
