Isn't it crazy that something that grows as wild and abundant as chayote can be so expensive to buy?? Same with lettuce - it's such an easy crop for us and self seeds, but because commerically it's grown in areas prone to flood, it's more likely to suffer times where it's not available. Even eggs - we always have eggs, but at times there's none in the supermarket. Another reason to do what you can to grow your own food, right? What's your favourite chayote recipe?

Yes, it is surprisingly how something so easy to grow can become expensive in the market. That is why growing our own food, even just a little it’s a big help to us. Weather, transport and supply problems affect prices. My favorite chayote recipe is Chicken tinola because the chayote makes the soup more flavorful. I also love sauteed chayote with egg, it is simple and my child’s favorite every morning.

Chicken tinola looks amazing. I might have to try it when I grow chayote!
